What Ingredients Do I Need?
- 1 TBSP olive oil
- 1 package thinly sliced smoked andouille sausage (12.8 oz)
- 3 cloves garlic (minced)
- 1 onion (diced)
- 3 carrots (peeled and diced)
- 2 stalks celery (diced)
- 2 cans (15-oz) Great Northern beans (drained and rinsed)
- 1/2 tsp dried oregano
- 2 bay leaves
- 4 C chicken broth
- 2 C water
- Salt and black pepper (to taste)
- 3 C baby spinach

How Long Does It Take To Prepare & Cook The Slow Cooker 5-Bean Soup?
Prep time for this recipe is 10 minutes. Short preparation time is one of my favorite things about slow cooker recipes. Total cook time for this recipe is 8 hours(on low heat) or 3-4 hours on high heat. I always recommend low heat as it keeps the ingredients from cooking too fast and getting mushy.
Easy tip: Dice up the veggies on the day you get them at the store. Put them in airtight containers in the fridge or freezer. On cooking day, you will only have to dump them into the slow cooker.
How To Make The 5-Bean Soup
Step 1: Add olive oil to the skillet on medium-high heat. Carefully add sausage stirring often until the sausage is cooked and lightly browned. (about 3-4 min). Set aside.
Step 2: Add garlic,onion,carrots, celery, beans, oregano, and bay leaves to the slow cooker.

Step 3: Add the beans to the slow cooker.
Step 4: Add salt and pepper to taste.

Step 5: Transfer the sausage to the slow cooker.

Step 6: Add the can of broth and the water, Stir to combine all ingredients.

Step 7: Cover slow cooker and cook on low for 7-8 hours, or on high for 3-4 hours.
Step 8: Add spinach. Stir until the spinach is wilted. Serve while hot.

What Can I Serve With The Soup?
I have to tell you, that one of my favorite things to serve with soup is bread. You can either buy some at a store or make your own with a bread machine.
You can also serve it with a side salad, or some rice to make it a complete & hearty meal that your family can serve themselves when they are ready. Clean-up is easy, especially if you use slow cooker liners.
